Winter always makes me crave soup, somehow it warms up every bone in your body!

This is one of my favourites and it’s pretty healthy too! I hope you enjoy it as much as I do!

Zucchini, feta and potato soup
Serves 6

2 tablespoons olive oil
1 medium onion, finely chopped
1 large clove garlic, finely chopped
1 tablespoon thyme
2 cups chicken stock
2 cups vegetable stock (or you can just use 4 cups of one kind of stock)
2 potatoes, peeled, rinsed and cut into 1.5cm cubes
4 large zucchini, cut into 1cm slices
½ cup basil, chopped
¼ cup natural yoghurt
150g feta, crumbled
Salt and pepper, to taste

Heat the olive oil in a large saucepan. With the lid slightly ajar, sweat the onions on low heat for five minutes. Next, add the garlic and thyme and cook for one minute.

Turn the heat up to medium and add the potato. Cover and cook for eight minutes. Stir the potatoes occasionally to ensure they don’t stick.

Add the zucchini and cook for two minutes. Add the stock and bring to a boil. Reduce the heat and simmer with the lid off until the potato is soft when poked with a fork.

Stir in the basil and yoghurt. With a stick blender or food processor, blend the soup until it is smooth. Season with salt and pepper. Add the crumbled feta and stir through.
