Try this healthy and delicious winter soup as a hearty lunch or dinner option!


15g margarine and 15ml sunflower oil

2 large onions, thinly sliced

4 leeks, washed, trimmed and sliced

2 cloves of garlic, chopped

500g broccoli, broken into florets

1 litre of chicken stock

150g feta cheese, crumbled

75ml plain, low-fat yoghurt

Salt and pepper to taste


  1. In a large saucepan heat the oil and margarine
  2. Sauté the onion, leeks and garlic until soft and transparent
  3. Add the stock, broccoli and seasoning and bring to the boil
  4. Simmer for 20 – 25 minutes before removing from the heat
  5. Let soup cool slightly and then puree
  6. Reheat and stir in feta cheese
  7. To serve swirl in yoghurt and crumble over more feta
